Welcome back to You’re Invited To Our Sunday Dinner’s! It’s the 1st Sunday of the month and excited to share this multi step meal. So here we go friends. Let’s get ready to satisfy some rumbling belly’s!
2 pounds of thin center cut pork chops (If you have more time use boneless pork shoulder)
Salt and freshly ground black pepper
1 tablespoon ground cumin
1 tablespoon dried oregano (I used Mexican Oregano because that’s all I had on hand.)
2 tablespoons extra-virgin olive oil
4 cloves garlic, peeled, & nicely smashed (Just smashed enough to help it release it’s flavor)
1/4 teaspoon dried red chili flakes
1 medium onion, sliced
1 cup fresh orange juice
1 lime, juiced
1 cup low-sodium chicken broth
2 bay leaves
1 long Cuban bread roll or any kind of roll that will hold juices and not break/get soggy
3 tablespoons Dijon mustard
8 thin slices Swiss cheese (I cut mine in half because I used smaller rolls.)
1 cup bread and butter pickles or regular pickles
Thin slices deli ham
Toss in your gently minced garlic along with your olive oil and peppered flakes in medium hot pan to release and combine all the flavors.
Next measure out all your seasonings: Salt and freshly ground black pepper, 1 tablespoon ground cumin, 1 tablespoon dried oregano
Rub seasoning mixture all over the pork and toss into the garlic/pepper/oil pan.
Then slice some onions.
Step 3: Toss onion slices over the pork, add your chicken broth, orange juice, lime juice, and bay leaves. Salt and Pepper if desired.
Step 4: Cover pan and allow to cook thru on medium heat.
While that’s cooking: Gather your cheese, ham, mustard, pickles and bread.
Slice up the bread rolls.
Step 5: Check on your pork and add adjust flavor as needed if needed. Don’t eat the bay leaves. Set them aside.
Next smear mustard onto rolls and brush some pan juices from the pork chop (of course when pork chops are done). Top with cheese & pork chop.
Step 6: Top sandwich with ham slices and 2 pickles. Yes. 2 pickles. You can add more.
On a hot skillet put sandwiches to toast both sides and until cheese begins to melt.
Step 7: Keep making sandwiches until all done. Slice if desired.
Serve with mac and cheese and colesaw. This is a crowd pleaser. Well, in my home a family pleaser. It made the recipe cut & family approved!
