Awesome, you made it back for another fam fav! Super easy Mama’s Chicken Salad Sandwiches. But first, ingredients:
Ingredients:
1 1/2 Rotisserie All Ready Cooked Chicken
1 cup or more of Mayonnaise depending on taste
1 1/2 Celery Stalks chopped
4 boiled eggs, peeled
1 small sliver of finely chopped Onions
3 Tbsp. Pickled Sweet Relish (You can also use regular Pickled Relish. Don’t recommend the mustard one. Or you can finely chop up some pickles.)
8 Pitted Spanish Olives with or without Pimentos
Salt & Pepper
2 dashes of Garlic Powder
Bread, Crackers, or Lettuce Leaves
- Gather all ingredients. Chop/shred up chicken into good bite sizes into a good size bowl. Younger kids prefer it finely chopped/shredded. Toss in your celery & pickled relish. I think the pickled sweet relish balances out the saltiness of the olives.
2. I usually use a side sliver of the onion, 4 boiled eggs, and a 8 olives (Only because I like the taste of it, but 1 kid doesn’t care much for it.) I toss all into my trusty chopper & finely chop and then mix into chicken mixture in Step 1. No one even notices there’s onion and olives.
3. Toss in all my chopped up ingredients from Step 2 and add the Mayo. The mayo is dropped in a few spoons full at a time and if I feel it needs a bit more, I simply add another scoop or two. As long as it sticking together and not running wet with mayo. Add my 2 dashes of Garlic Powder and minimal Salt and Pepper to taste. Mix and combine. The longer it’s allowed to sit in the fridge and combine all it’s flavors the better the taste. This can easily hold in the fridge for up to 3-4 days. A quick day time lunch and go item!
Enjoy on toasted bread like I prefer. On crackers like 1 of my sons does or on lettuce leaves like my daughter does. It’s just so odd we all eat this differently!
