I said SHICKen is for dinner! Green Shicken! I just absolutely love this quick go to meal for us when I’m needing to make a grand dinner but super fast. From hindsight this meal does seem to appear that it’s going to take long. I agree. When it’s your first time making any new recipe it always just takes a bit longer because you must make time to gather all the ingredients but once you make this once or twice I guarantee this will also be one of your quick go to meals of the week! So let me share!
Green Shicken Pasta Dinner Recipe
- 1 lb. of raw chicken
- 1/2 lb. of uncooked noodles (any kind)
- Drizzle of Olive Oil
- Salt & Pepper for taste
Pesto Sauce (This is as exact as I can get because I normally just eyeball everything. I told you it’s my quick go to meal dinner.)
- 1 cup of Virgin Olive Oil (I normally begin with 1/3 cup just in case I need more then I pour the rest in)
- 1/2 of Parmesan cheese (shredded/powdered)
- 2-3 big leaves of fresh Basil (fresh is the best)
- 1/4 cup of raw almonds
- Salt & Pepper for taste
Let’s multitask! Get shicken and pasta ready while it cooks we can prep the sauce. Here we go.
Get your hot skillet ready with just a pour of some olive oil. Cook all the shicken as close to done and begin to shred apart.
2. Throw it back into the hot skillet and brown up just a bit more.
3. Meanwhile your noodles are cooking and softening up.
4. Pesto Sauce. Pour in 1/3 cup of Olive Oil, (save the rest just in case you need more to make Pesto more saucy. Pour in 1/2 of Parmesan cheese (shredded/powdered), 2-3 big leaves of fresh Basil (fresh is the best), 1/4 cup of raw almonds, Salt & Pepper for taste. Sometimes you just have to play with your food!
5. After Pesto sauce is done pour over the hot shicken and mix.
6. Drain noodles and pour onto pan & mix. Mix shicken and all pasta together to allow the sauce to cover everything.
7. And wala! Green Shicken Pasta Dinner is done! Serve with simple salad or green beens. Hope you enjoy and share the fun!
