Wore a good one to the store and the store clerk was so impressed to know where did I buy it at? An idea sparked and has blessfully grown into these beautiful headbands!

I have been gathering all the good stuff, handcrafting and designing each individual headband with the same love that was put into it for my daughter when she first asked for her monkey headband! There will be no monkeys this time but plenty of fun color, glitz, and glitter all flipped into one!

How To Layer An Enchilada Casserole

Welcome Friends!  You’re Invited to Our Sunday Dinner!  I’m always so excited to share some recipes from my home to yours. Today it’s all about layering an Enchilada Casserole.  If you prefer to individually roll them it would be the same ingredients.  I find when I’m short on time a casserole is the perfect solution to feeding my hungry family of 5.  And it is so much better as a left over the next day! Yummy delicious!

Enchilada Casserole Share the Flippin Fun Estela Kelley Sunday Dinners

As always, let’s gather some ingredients. I didn’t put the enchilada sauce recipe here because, 1) it’s an eyeball sauce so I don’t have precise measurements for you.  Next, time I will.  I promise. So in the meantime, grab a can of already made enchilada sauce.  I would recommend McCormick Enchilada Sauce Mix if you can’t find a Canned Enchilada Sauce you like. This recipe serves 5+ and some left overs for the next day.

Ingredients:

Enchilada Sauce Can or Mix  (Follow the directions on packet. Get make sure to get enough sauce can or mixed for 2 lbs. if you are following this exact recipe.  If not, use half if you are cutting it down.)

1 pack of 20 corn (white or yellow) count tortillas

2 lbs ground beef (Can also use turkey beef.)

Lots of shredded cheese – I use Mexican Blended Cheeses which are already mixed in a bag.  (We usually have a huge bag on hand but for this recipe a 2 to 3 lbs of cheese will do.)

Step 1: Ground beef until done.  Heat the sauce until hot.

Gently insert one corn tortilla into the already sauce and allow to soften and soak up the flavors of the sauce before gently scoping out and begin the layering process.  Here I used a regular 9×12 baking pan.

I use 10 corn tortillas for my cheese tray and 10 more for my meat and cheese tray.

Step 2: Follow Video.


Step 3: Once done with the layering process toss in 400 degree oven for approximately 20 minutes until cheese is bubbling and melted. I have 1 tray (Use disposable pans if you’re not much into cleaning up.)  with no meat for my picky eaters and 1 tray with meat.  Enchilada Casserole Share the Flippin Fun Estela Kelley Sunday Dinners (1)

Serve with  my spanish rice recipe, beans, veggies, and your favorite salad. Dinner is served! Buen Provecho!

Spring to Summer Decor

Everything here on clearance for Spring Decorating Time!

Decorating in general is so much fun and therapeutic!  I’ve even started a paint project at home because I still want my items but a different color.  One doesn’t need a lot of things but a little here and there to spruce up one’s comfort zone.  This gorgeous Balance Scale Statue.  This has a very minimalist look but imagine dressing it up for winter time.  Totally doable!

Another spruce up item are White Marble and Mango Wood Cake Stand to beautifully decorate any kitchen counter(s) or display some knick knacks. Buy a few at these prices and layer them up! Pop up a Black Mosaic Framed Wall Mirror for an entryway to welcome all guests.  Best thing is, it can be completely repainted if one is super duperry handy. Some Clear Glass Stick Candle Holders for a mantel, a buffet, or staircase.  When the candle is burned replace with a simple topiary for any time during the year. Feel the vibe and love your home.

So we’ve covered an entryway, a mantel, and kitchen counters but what about the front porch entrance to fully welcome a guest or kick up one’s feet outside on the back porch?

Chicken Pad Thai For This Guy

You’re invited to our Sunday Dinner’s! Welcome once again and you are always welcome to dine with us! First things first. Gather all ingredients.

Ingredients:

2 lbs. of raw chicken.  I usually buy the seasoned fajita pack. Thighs or breast. Whatever is your preference.

1 bottle of Peanut Sauce.  If you can’t find any make like so:

  • 3 Tablespoons fish sauce – I would add this a tbsp at a time, stir, taste, adjust, stir, taste.  Some people don’t like that much fish sauce but a a tbsp is just fine too.
  • 1 Tablespoon low-sodium soy sauce
  • 5 Tablespoons light brown sugar
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon Sriracha hot sauce , or more, to taste
  • 2 Tablespoons creamy peanut butter , optional but what’s the point if there isn’t any peanut butter! I don’t ever skimp out on this.

1 lb. of Rice Noodles – This bag serves a family of 5.

2 – 4 sprigs of green onions

Toasted Sesame oil

1/2 cup salted spanish peanuts

1. Gather all ingredients and begin to soak noodles in very hot water.  I usually boil up some water before hand, turn off heat, toss in noodles to soften.  This will take a sometime to soften up so do this first while you move on to step 2.

 

 

 

 

 


 

Chicken Pad Thai For This Guy Share the Flippin Fun Estela Kelley Sunday Dinners (3)  2. Chop up raw chicken into good size bites. Since it’s already seasoned you don’t need to worry about salt and pepper. Toss in pan with a generous amount of oil. Cook until done. Set aside. Here’s my pan!

4. Drain the soften noodles. Layer in some peanuts, all the sauce (or you can save some for the chicken), green onions. Fold in well. Careful not to break up the noodles. You can mix in chicken or on the side!

Lovely Must Have Seagrass Baskets

Oh gals and friends, it’s spring time spruce up at my home.  How about your’s?  Sharing these beautiful multi-functional seagrass baskets.  Can be used under your entry table for guests to drop in shoes, purse, sweater, kids toys or large bag. Can also be used to store away pillows/cushions, and blanket.

What I love the most use is one I never would have thought of until this picture popped up. Used for as a planter cover up.  Cover up the old pot with something newer, hip, and trendy.  Hmm…..mama gonna have to grab a few at this price. Another idea is once you tire of the beige white color…..easy to paint over with some fabric paint! So reusable.

Big Bang Beefaroni

Welcome!  You’re Invited for Sunday Dinner.  Another Sunday series with some awesome recipes for you to keep handy and make your next meal a success all while feeding some hungry tummies.

Today’s dinner is Big Bang Beefaroni.  Named it so, because you get your food bang for your money here with this quick and easy meal.  It will probably be your go to meal during a busy week like mine is often.

While gathering all your ingredients, grab a cooking pan.  Nothing works better than a well seasoned cast iron pan to brown and cooked up some lean ground beef. You will need a big pot for the elbow pasta.

Do you like your meat well browned up with some small tidbits laying in the pan?  Sometimes, I do.  And drizzle on top of my Big Bang Beefaroni. Serve on the side for that person who likes just a little more meat taste.

Make sure to carefully mix in the paste or fold into the noodles. Like I mentioned in Step 4, works best with hot fresh noodles/pasta.

When all done with all the steps, it’s time to get a bowl/plate and get your Spaghetti Scooper & serve hot with some hot french buttered bread, corn on the cob, and light salad. Guys and Gals….Dinner is served!

I rewarded myself with a substitute day chip and salsa with hummus and pita chips. Read the servings per package to keep in line with moderation.

Everything’s Hopping Decor

I’m noticing that Spring decor is popping up more and more.  And I love to go window shopping as much I love to decorate. Each season brings its own palette of colors, textures, and new ideas to the table.  Each holiday is so different from the other.  How can one decorate on a budget and decorate each season, let along each holiday?  I’ve figured out some stuff.

First of all, stay in the same color hues for 2 seasons is one idea that way you don’t have to spend a fortune each season and introduce or take away some parts of season.  For example, if I were to decorate from Spring time and transition into Summer, I would choose my color for the next few years.  This year, I’ve remodeled parts of my home, so I’m introducing yellow walls, pink, greens, and some slight grays (maybe). My living room walls are yellow and kitchen is green.  I have this beautiful picture with some vibrant hot pinks and that’s what I’m concentrating on. Since it’s Spring, I am looking for hot pink flowers and rugs, accessories, and such. And this will be a very easy transition into Summer and Fall thru Winter. This was not planned but my winter theme has become a Whoville palette and theme. And Whoville colors are bright, whimsical, and so so pretty, glamorous, and glitzy.  My whole point and decor I’m going for these days.  I’m so excited as you should decorating your home as well.

What I like about some and most Easter decor is that eggs are food so you can display them year round, pop the eggs off for fall decor, slide in some Fall leaves to create more fluff. Fall/Winter ends, remove seasonal leaves, and pop eggs back in! Such easy ideas, huh!
